5   Cassava Flour in the Kitchen

This new and tasty recipe has been developed by IITA:

Ingredients

100 g

(1 cup) of cassava flour

 

50 g

(¼ cup) of margarine

50 g

(¼ cup) of sugar

50 g

(¾ cup) of grated coconut

1

egg

5 g

(1 teaspoon) of baking powder

water

(enough to make a stiff dough)

 

Preparation

1.  Cream sugar and margarine until light and fluffy.
2.  Add cassava flour, baking powder and the grated coconut.
3.  Mix to a stiff paste. If it becomes too stiff, add some water.
4.  Roll out on a floured board.
5.  Prick with a fork to prevent the pastry from rising too much.
6.  Cut into nice shapes and arrange on a greased cookie tray.
7.  Bake for fifteen minutes at 175°C or until evenly browned.

Taste the coconut biscuits with a good cup of coffee or tea!
