5 Cassava Flour in the Kitchen
This new and tasty recipe has been developed by IITA:
| Coconut Biscuit |
Ingredients |
| 100 g | (1 cup) of cassava flour |
|

50 g | (¼ cup) of margarine |
| 50 g | (¼ cup) of sugar |
|
| 50 g | (¾ cup) of grated coconut |
|
| 1 | egg |
|
| 5 g | (1 teaspoon) of baking powder |
|
| water | (enough to make a stiff dough) |
Preparation |
| 1. Cream sugar and margarine until light and fluffy. |
| 2. Add cassava flour, baking powder and the grated coconut. |
| 3. Mix to a stiff paste. If it becomes too stiff, add some water. |
| 4. Roll out on a floured board. |
| 5. Prick with a fork to prevent the pastry from rising too much. |
| 6. Cut into nice shapes and arrange on a greased cookie tray. |
| 7. Bake for fifteen minutes at 175°C or until evenly browned. |
Taste the coconut biscuits with a good cup of coffee or tea!
