Drying

In Egypt, there are no drying problems for cereal grains ,since the weather conditions (strong sun and dry air) at the harvest times of grains are suitable to obtain low moisture content of grain.

Usually, farmers apply the sun and wind for drying cereal grains and pulses to reach low moisture content before storing. The harvested crop is placed on the ground of the thresh place as in case of wheat, barley, paddy rice, and beans or on the roofs of the farmers homes as in case of corn.

The thickness of the layers of corn cobs is not too thick in order to ensure good drying. No heat damage is recorded for cereal grains as a result from too much exposure of the produce to the sun in Egypt.

Farmers' wives are always washing wheat grain before milling and drying it on sheets or mats in open air and sun. Grains are subject to bird attack during drying.
