Sweet potato cake
Ingredients
- 3 mugs cooked, mashed sweet potato
- 1 mug boiling milk
- 2 drops vanilla essence
- 3 eggs
- 2 level tablespoons sugar

Preparation

Wash, peel, chop, cook and mash the sweet potato.

Boil the milk in a saucepan.

Add the boiling milk and vanilla essence to the mashed potato.

Beat the egg yolks together with the sugar and add to the potato mixture.

Add the butter and mix well.

Fold in stiffly beaten egg whites.

Place the mixture in a bread tin and bake in a hot oven (200°C) for about 1 hour.
